Ingredients:
Gluten-free: Vegetarian (opt vegan)
½ cup (90g) raw buckwheat groats
¼ cup (20g) shredded coconut
2 tablespoons (30g) sunflower seeds or pepitas
1 teaspoon ground cinnamon
4cm piece of orange rind
1 1/2 cup water
½ cup unsweetened Greek yogurt or soy yogurt for a vegan option
100g fresh or frozen mixed berries
Rinse and drain buckwheat groats, then combine with shredded coconut, sunflower seeds/pepitas, cinnamon and lemon zest in a bowl or glass container. Pour water into a bowl, mix to combine and place in fridge to soak overnight. In the morning, mix with greek yoghurt and berries and enjoy.
